In this level 2, we will deepen knowledge and explore new seasonal menus in a plant-based approach. All modules are theoretical and practical, so that participants can experience the process in its entirety, performing the preparation, cutting, cooking and serving methods.
We will give more focus to the 5 flavors, the different types of cuts, cooking techniques and methods, in a preventive and health maintenance cooking practice.
Each participant will have the opportunity to make their own menu and eat according to their constitution and condition, creating consistent habits in the kitchen that help to have a more conscious diet. The goal is to improve your physical and emotional well-being through food and lifestyle.
Themes we will cover:
Meal planning, in order to organize a weekly menu;
Food waste - managing the surplus from cooking produces greater savings both economically and environmentally by reducing food waste.
Variety of protein foods that can make up a plate in a healthy, nutritious way, with a delicious result!
Homemade items for preservation and use over time, including vegetable broth, pies, croquettes, burgers and good quality sauces and mayonnaise.

This course aims to prepare and give participants the tools to:
- Gain awareness and practice in plant-based cooking
- Know how to assemble your own kitchen as needed
- Incorporate the rudiments of macrobiotic cooking in a real way
- Being able to execute balanced and appetizing meals
- Establish contact with food preparation and cooking methods
- Cooking with a focus on seasonality, quality and origin of products
