O Nível 1 do Curso SOLO destina-se a qualquer pessoa que sinta interesse por esta área, ou queira mudar hábitos e assumir o controlo do seu estilo de vida ou carreira, numa formação que sustenta gerações.
Our hands-on classes are a great way to immerse yourself in amazing techniques for mastering the art of cooking. Many of the cooking techniques and style are based on the Macrobiotic philosophy, in a fusion of Japanese Cuisine and Mediterranean Cuisine.
This course aims to prepare and give participants the tools to:
- Get awareness and practice in Plant-Based Cooking
- Know how to set up their own kitchen according to their needs
- Incorporate the rudiments of macrobiotic cooking in a real way
- Be able to execute balanced and appetizing meals
- Establish contact with food preparation, cooking methods and conservation
- Cook with focus on seasonality, quality and origin of products
MODULES:
Module 1 – 10 de outubro
Rudiments of Plant-Based Cuisine - CLASSIC MENU
Standard macrobiotic diet and its fundamentals. Cereals, protein sources, vegetables, seeds, oilseeds, seaweed, fermented and natural sweeteners. We will talk about lifestyle in the eyes of Macrobiotics and how to set up our own kitchen.
Module 2 – 17 de outubro
Spring Kitchen - WOOD MENU
In this module we will cook foods that help us to cool down, as well as detoxify the body and mind. Raise our energy and insight. We will cover quick sautés, sprouts, freshness, and acidic flavors.
Module 3 – 24 de outubro
Summer Kitchen - FIRE MENU
In this last module the mission is to cook from the heart and indulge ourselves, to know how to adapt to the heat and to a more intense physical activity. We will steam cook, make light pickles, and accentuate the bitter taste in summer food. We will want light and colors on the plate.
Module 4 – 7 de novembro
Late Summer Kitchen - EARTH MENU
Balance, transformation, absorption, and distribution will be the key words in this module. Know how to nourish with an incredible variety of foods that nature puts at our disposal, approach foods that protect our digestive system, and naturally introduce sweet taste into our meals.
Module 5 – 14 de novembro
Autumn Kitchen - METAL MENU
Purification, alchemy, solidification, density, structure, and refinement is what is desired when the leaves fall. Knowing how to root and adapt to cold and dryness. To introduce sautés and long pickles, stews, and the spicy flavor into our cooking.
Module 6 – 21 de novembro
Winter Kitchen - WATER MENU
Depth, sources of vitality, resistance and adaptation to cold and humidity reign in winter. Creating longevity, knowing how to balance minerals and liquids becomes necessary. Long stews and pickles, roasts and tempuras, as well as the different qualities of salt we can use.
